I think this would really depend on the kind of vampire we're talking about
I can definitely see Azula the more brooding, ancient one who hates that she still has to go to college (thinking of Carmilia!). She would unwittingly fall in love with her roommate (Katara) while trying to do whatever job she was given by her father?
If Katara was a vampire, I think she would be more like Juliette Fairmont from First Kill. She just wants to be normal and is an awkward teenager who falls in love with a hunter (Azula).
